My exhaust exits out of the passenger side(instead of the driver side like stock); I could make it exit out of the "correct" side but don't want to do any work on the exhaust. Would it be possible to make a diffuser out of 1/2" plywood to cover that spot, without being burned by the hot muffler?

Sure, why not? It's under the car, so I don't think it'll really be visible. If it breaks, just make another one. I have a whole bunch of plywood from when my dad built the woodshop.
