Well I broke down and bought this bad boy this weekend. I did a hot smoke on some salmon with apple wood. It was delicious. Post up what you got.

I've looked into a few of them in the past. I am eating less and less meat these days for no apparent reason so I decided it was not something I needed.
 
Right on.


I have access to lots of salmon to smoke. Maybe someday I'll catch some of my own.

That being said, a few friends have smokers. When you have the time, I don't think there is a better way to cook anything. For the moment, with limited space, I have a countertop dehydrator that I love to make jerky with. I imagine a smoker would take it to another level. Only thing is that a smoker requires, at least, moderate supervisor throughout, my dehydator I can plug in before I leave for work or go to sleep.

That's why I got this model. It doesn't take much supervision. Get a wireless remote thermometer. Plug that into the meet and set the designated temp. Load the hopper up with bisquettes and you're rocking and rolling once you get the temperature dialed in.


Truly. Set it and forget it.
 
I actually don't care for smoked salmon at all. I do like a good smokey bbq, brisquet, ribs, etc, though.
 
My parents have a Traeger (sp?). Love that thing.. I usually cook a few lbs of meat to bring back to school with me. Night and day difference in taste compared to a BBQ
 
Traeger's are legit. Someday I'll have one of each kind.

Pure Smoker, Charcoal, Gas, Traeger.

Right now I have 3 :) + a baby weber.

I want to get a smoker, so im in for the read. I have access to fresh fish on a regular basis. Some of the more oily ones like Spanish mackerel, kingfish, and even tuna and cobia are amazing smoked. Plus you can make fish dip with it too. And yeah, smoked pork is to die for.

what brand/model is that J? its not really clear in the picture.

I got the bradley original smoker. It has a conveyorbelt to keep constant smoke/temp. Expensive though buying propietary bisquettes though.
 
Oh I gotta find pics of mine in action, it's covered in snow right now. You guys will get a kick out of it.

This thread just reminded me of something that happened last winter. I was on a ski trip, upstate NY or VT, and I just see smoke billowing into the air. It was on the road we were on, and in the middle of nowhere, so we pulled over to help. Turned out it wasn't a fire, just the biggest smoker I have ever seen, real life or on TV, being run by a guy in overalls with no shirt, in the middle of winter. He found it hilarious we thought it was a fire.
 
Hah. That's great. Big barbecue is real hard. The art is more in shoveling coal and regulating temperature than anything.


I'll have to do some digging to see if I can pictures of my grandpa's. His is the size of a small conversion van.

My buddy is a hunter/smoker...he makes his own BBQ sauce and rubs....he makes smoked chicken wings that are out of this world.....i've been tempted to get one of these...
