cooked up some rainbow trout tonight, put some salt and pepper on the fish, then dredged the fish in flour, and pan fried it. once it was done I melted some butter in the pan, added garlic, then lemon and capers. once it was all done I poured the sauce over the fish.

For all of you folks that say you don't like fish. Chances are you've never had good fish.
I've been able to turn so many fish hating people into fish loving people.
In fact Rachelle hated fish before I fed her =)
now she gets weird cravings for sushi.

Just remember, if it taste like fish, it's no good!
 
I think the reason why the majority of people don't like fish is because they normally have eaten lake fish instead of ocean fish.

In my experience, lake fish don't taste as good as ocean fish.....water quality, salt content in the ocean are two reasons.

I don't like trout that much, but I love to eat halibut.

most people who hate fish either had it at a cheap place that serves frozen fish things like fish sticks. If they're lucky enough to have fresh fish someone either cooks it like ass (fish is touchy) or they use fish that is not fresh.

Who the hell buys fish and stores it in the fridge for a day or two? LOTS OF PEOPLE. better yet they keep it wraped up in the paper they bought it in.

I love fish of most kinds. I really just love seafood. I only dislike clams. And I even enjoy the fish taste.

Well I live in So Cali, so I'm not going to argue with you, as our "lakes" are a joke and fish were farm raised then stocked in the lake only to be caught a few hours later.

When I eat trout, it is only fresh trout.

All I'm saying is that the trout I have caught in California is not real tasty. On the other hand, I took a 3/4 day charter boat out to Catalina Island and got my first legal halibut. 45 some odd inches. Took it home, baked it, and it came out tasting better than most filet mignon does. I do believe that the salt in salt water, contributes to the taste of fish.
 
And you have never had clams in your life.....until you have had FRESH Pismo clams. The stupid vietnamese immigrants in Pismo Beach essentially raped the beach clean (read: poach) a few years ago, and the clams are barely making a comeback.

Legal size is something like 4 1/2 inches and they taste SO good.

I don't think they taste bad, I dislike the texture. Same reason I don't eat veal. I could care less that it's a baby cow, I just don't like it.

Fresh is fresh. even farm raised, while it might have a slight difference in taste and even sometimes a slight difference in color, it will still taste good.

CA waters are polluted.

On a side note, sice most of you guys are from the midwest, you ever heard of a thing called noodlin' ?

Bunch of rednecks wade into a lake and dive underwater and put their arms into holes and manually pull out catfish with their bare hands.

CA waters is only polluted if you live in So. Cal. I live in Nor. Cal with all the hippies and cowboys, NEVER had any water problems. Well, until I moved to Sacramento. The tap water and showering water is gross. Its all grainy and has all these weird F, Cl smell.

Anyway, around Burney Falls, Shasta, etc... the water is good and the fish is good. Some of the streams you can actually drink out of. The mountain bass is the local favorite for the Asian group. I think the white folks usually go for trout. I think trout is a bit too firm and stiff. I like the soft flesh of bass and its easier to keep than trout.


Moving on, wow Jeffie are you some kind of cook or just an aficiando? I try, but most of my exp. come out, well less than appetitizing. I usually stick to sausages with some yellow onions cooked with hoisen and sarachee sauce.
 
I just cook for fun =)
