to monitor your exhaust gas temps. you can tell a lot by your egt's. running lean and/or too retarded will cause high egt's, and running rich will generally cause lower egt's, etc., etc.
EGTs are very tricky for beginners to use for tuning - they're more useful as a warning that something is going seriously wrong with the tune (i.e. really high EGTs). Unlike AFRs (95+% determined by injector pulsewidth) from a wideband, there are many factors that influence EGTs which often makes it difficult to determine the exact cause without simultaneously knowing other information (injector pulsewidth/AFR, timing, resitrictiveness of exhaust side, ... ... ...)
