It's just like leverage... the longer your tool/handel, the easier it is to apply more force to it.

Not always. If anything, sounds like it's just for look. The 0 offset actually affects scrub and the suspension geometry. Many race cars that do have wheels sticking out, they only do that because they can't move the wheel further inwards.
