Just wondering...

I've got a knock sensor issue which keeps tripping code 23. Should I put the time into fixing this problem or should I just chip the ECU and forget about it?

Is there a noticable advantage in having a operational knock sensor? What could happen if I remove it?

lots of things cause knock.
anything from shitty gas to forged pistons rattling slightly inside.

hondata disables it. to me, that says it all. on a well tuned car, it is really not necessary

Well, that's the point. He's NOT running a dyno-tuned car. It's more or less stock, with some minor mods. IMO, it's best to leave it enabled until you can get something like a Hondata and get it on a dyno.
