Pancit - Hands on Kitchen
I have to admit I haven't had pancit anywhere out side of a Maryland Filipino Festival, so when coming up with this recipe I pulled info from the internet as with a few Filipino cook books I have. What I've learned is that there's a handful of ways to make pancit and even two very different styles of pancit, one being Pancit Canton, Pancit Canton uses a totally different noodle then what most people think pancit uses. 1 piece of chicken, cut into strips. about 6 oz worth. I prefer dark meat.
1/2 package of rice stick noodles, soaked in water for 15 minutes then drained.
8-10 small shrimp with shells removed
1/2 chorizo sausage cut into strips.
about 1/4 cup of carrots cut into strips
about 1/4 cup of cabbage cut into strips
about 1/4 cup of onion cut into strips
about 1/4 cup of snow peas
4 cloves garlic minced
1/2 cup chicken stock
1 TBS soy sauce
about 1 TBS of oil for cooking (I prefer olive)
Corn starch slurry (corn starch mixed with water) optional.
