This has been on my list of recipes to do for awhile now, I'm glad to have done it and hope it helps bring legit Hispanic food into North American kitchens more so then basic taco bell or ground beef in a hard taco.

    Meat filling.

1 LB pork shoulder cut into small pieces.
1 14oz can of whole tomatoes drained and seeded, or if in season 4-6 small tomatoes peeled and seeded.
a half of large onion in chunks
a half of green pepper in chunks
    5 cloves of garlic
    dash of salt
    1 TBS oil for cooking.

1, 15 oz can of black beans or 8oz of dried black beens (if using a dried beans make sure you pre cook them)
half of an onion, diced small.
4oz of cheese grated cheese. Monterrey Jack is what I used.
    oil for cooking.

    2 cups corn flour "maseca"
2 cups water give or take...
