I made a chicken last night and decided I wanted to make soup with the left overs, so, I did.
My first time. It came out damn good.
I picked off the good meat (on the right and put in the freezer to make with stir fry at a later date.
The carcass on the left went into the stock pot to simmer for 4 hours along with onion, celery, shallots, celery, a dash of kosher salt, a bit of black pepper and a carrot.
Added a couple bay leaves, basil, and parsley and simmer simmer
after about 4 hours, i had some good stock.
Dried bag of mixed beans set in water overnight to soften
Today, I re-heated the skimmed broth, and added in fresh carrots, onions, celery, shallots, mushrooms, the beans, a cup of pre-cooked rice, adobo seasoning (really THE ingredient if you ask me-- changed the way the thing tasted from bland to perfect without getting salty), a few more seasonings and cooked it for about 2 hours.
Done and done
I ate half of one already :X
It's a nice hearty soup that tastes great. Low salt, all fresh, and cost less than $12 to make, and that includes the whole roaster chicken ($7) that will provide 3 meals for me alone, and now 6 jars of 4-cup each soups, (minus the 2 cups i already ate).
I didn't jar it properly as i don't yet have a pressure cooker (next paycheck), so these are going in the fridge. I don't imagine them lasting more than a week anyway. 2 are give-aways, 1 is half gone, that leaves 3 left for the week
