these kits are really nice but the bad thing about the GReddy Kit is they don't produce a lot of power due to the undersized turbos. If you're not looking for a bunch of power this is a good kit but if you want mucho power get a kit with a bigger turbo or go custom.

I would do the 240SX, with a honda you have to sleeve the block and get rods, pistons, bearings, etc, etc and this ain't including the turbo kit you need.
sr20 swaps are easy and will get you there much faster than a honda buildup.
Crane, JUN, Skunk2 all make decent cams but you'll need to upgrade the valvetrain as well. I've seen Crower CAMs destroy a few engines and their retainers rip a GSR head to shreads so I say away from their cams & valvetrain.
sounds like you're not getting enough fuel, I had this problem on my lude and found the fuel pump was going bad. Replaced the pump and all was good.
Unfortunately without a wideband a/f unit you really don't know if you're rich or lean, those autometer narrowband gauges don't work.
