I know panache makes a kit at http://www.v8miata.com/ for 5.0 and 4.6 v8s.

The RX-7 would be better at the track than a V8 Miata. Rotaries are very light, and tantalize the eardrums with a very different sound. I had a 7, but my brother wrecked it.
