Need help with Adobe Premier

Ok, I musta misread the 'help' thingie or somethin, but I can't figure out how to:

1. Adjust volume of individual tracks
2. Add text
3. Put a title thing at the beginning (like a black screen with text)

adobe premier has so many work fields its confusing as hell imo i like a more simplistic
